Chocolate truffles


Last night I felt a little chocolatey. A little decadent. A little luxurious. Amidst my musing, I thought to myself, "what's more luxurious than truffles?" And it's true. They're rich and creamy and oh so delicious when you're in need of a chocolate fix. So I whipped these babies up in 20 minutes and called it heaven. For some reason the cream cheese/Oreo combo has the exact consistency of fudge... it's kind of uncanny. And they are so easy to make, no one who tastes them will guess that they're only 5 simple ingredients.

For the truffles:

15 Oreo cookies
6 ounces softened cream cheese
1 cup semisweet chocolate chips
3 tablespoons unsalted butter
1/4 teaspoon instant espresso powder (or 1/2 teaspoon instant coffee powder)

In a food processor, grind the Oreos until powdery. Set aside 1-2 tablespoons of crushed Oreos. Pour the rest into a medium bowl and stir in cream cheese until homogenous. Place mix into refrigerator and cool for at least 30 minutes.

While truffles are hardening, melt the chocolate chips, espresso powder, and butter in a small saucepan, stirring occasionally. Once melted, take off heat.

Once the truffles are cold, using a rounded tablespoon, roll the dough into balls. Place on a baking sheet lined with waxed paper.

Dip balls into melted chocolate and return them to the baking sheet to cool. To garnish, sprinkle the 1-2 tablespoons of Oreos set aside from earlier. Place in freezer until hardened. Voilà!

  3. The espresso powder is to bring out the flavor of the chocolate. The truffle doesn't end up with a coffee taste; because it is in such a miniscule amount, it simply enhances the essence of the chocolate.

  4. you didn't include any instructions for the espresso powder in the recipe, other than the amount.

  9. Not sure, haven't tried it because they get eaten so quickly! I'd say at least a couple days, but not more than a week because it is a cream cheese base. Hope this helps!
