If you’re a s’mores fiend like me, you’ve come to the right place. I think we can all agree that there is nothing better than the ooey gooey combination of a toasted marshmallow, buttery graham cracker and smooth chocolate. Like…case is closed. And if you like an old fashioned s’mores, then you are going to FALL IN LOVE with these s’mores brownies.

What are s’mores brownies?

I think this is pretty self explanatory, but I love to hear myself talk, so allow me to describe to you in detail how ridiculously tasty these homemade s’mores brownies are. S’mores brownies consist of 3 distinct layers: graham cracker, magic brownies, and toasted marshmallow. The combination of flavors and textures melds into the most lovely intense s’mores flavor. They are divine.

The secret sauce of these s’mores brownies is the classic bakeshop brownie recipe sandwiched in the middle: Zingerman’s Magic Brownies. If you’ve had a Zingerman’s Magic Brownie before, then you know that they are the *most* fudgy, decadent, chocolatey brownies you’ll ever have. Ever. Period. Layer that indulgent brownie recipe up with marshmallow fluff and graham crackers and, oh baby, you are in for A TREAT.

These homemade brownies require a bit more work and some speciality ingredients, but the final product makes everything so worth it. If you’re feeling pressed for time or a little lazy (no shame!) you can always replace the homemade brownie layer with a boxed mix or level up your personal favorite brownie recipe with the graham crackers and fluff!

I may be biased, but this s’mores brownie recipe exactly as stated is pretty much the best thing I’ve made all year. Here’s your grocery list:

Tips for the best s’mores brownies

  • Splurge on the good graham crackers: We’ve all had a bad graham cracker. You know the kind. It’s crumbly, flavorless, and pretty bleh. But a good graham cracker can be SO good. And it will make all the difference in these easy s’mores brownies!
  • Use high quality chocolate: When it comes to homemade chocolate treats like brownies or chocolate cake, your chocolate will really make or break the finished product. Make sure you’re using a good chocolate like Ghiradelli, Lindt, Guittard, or another high quality chocolate brand.
  • Under bake your brownies: The key to scrumptious homemade brownies is baking them the perfect amount of time. You’ll want a chewy edge with a bit of crunchy, but a nice and gooey middle. Remember that baked goods continue to bake after you’ve taken them out of the oven, so you’ll want your brownies to be a bit underbaked when you remove them from the oven.
  • Use a blow torch for a toasty marshmallow finish: This will really push your s’mores brownies over the edge and create that quintessential toasted s’mores flavor. If you don’t have a blow torch, you can always place your brownies under the broiler in the oven for a few minutes to get a little torched color on your marshmallow.

Ingredients

  • 9 graham crackers
  • 13 Tablespoons unsalted butter
  • 6.5 ounces unsweetened chocolate, finely chopped
  • 3/4 cup all purpose flour
  • 3/4 cup cake flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cup granulated sugar
  • 4 eggs, room temperature
  • 1 1/4 teaspoon vanilla extract
  • 13 ounces marshmallow fluff

Instructions

    1. Preheat the oven to 325°F and line a 9 x 9 baking pan with parchment paper on all sides. Place your graham crackers in a single layer along the bottom of the pan. You may have to break your graham crackers into quarters to get everything to fit, but it doesn’t have to be perfect! Set aside.
    2. In a heavy bottomed saucepan over medium low heat, melt the butter and finely chopped chocolate stirring constantly, until smooth and fully melted. Once melted, take off the heat to cool slightly.
    3. In a stand mixer fitted with the whisk attachment beat the sugar and eggs together until. fluffy and pale yellow in color. Scrape down the bowl and pour in the chocolate and butter mixture. Beat until homogenous.Scrape down the sides and add the vanilla. Mix well. The mixture should be glossy.
    4. Add the flours, baking powder and salt and mix until just combined and no streaks of flour remain. Do not overmix.
    5. Use a rubber spatula to spoon the batter over the graham crackers in your prepared pan, spreading the batter into an even layer all the way to the sides.
    6. Bake for 25 to 30 minutes or until a knife inserted into the center comes out mostly clean and the edges are set. Transfer to a wire rack to cool.
    7. Once the brownies are completely cooled, spoon the marshmallow fluff over the brownies, using a spoon to spread the fluff all the way to the edges, creating big swirls.
    8. If desired, use a blowtorch to toast the marshmallow fluff. If you don’t have a blowtorch, you can also place the brownies in the oven under the broiler for a minute or two, keeping an eye on it.
    9. Place in the fridge for an hour to set up before slicing into 9 large brownies or 16 small brownies, making sure to wash your knife in between slices. Enjoy!

  2. If you want an even more luscious, marshmallow top, you can also make a homemade meringue using:
    • 2 large egg whites
    • 2/3 cup granulated sugar
    • 1/2 teaspoon vanilla extract
